Here is a quick and easy recipe for Spanish Rice. It's a childhood favorite of mine that I just started making again and it is really good. Not to be confused with Mexican rice, a side dish common to most Mexican cuisines. The difference being that Spanish rice is prepared as an entree not a side dish because it contains meat. Ingredients: 3/4 cup uncooked rice 1 28oz can whole tomatoes 1 small can tomato paste 1 cup water 1/2 cup diced green bell pepper. 1 small onion diced 1 lb ground beef (80-20) season to taste (I just use salt and pepper) Instructions: Brown ground beef in a large frying pan when mostly browned, add onion and bell pepper and continue to cook until they are soft. Then add the can of whole tomatoes including the juice (cut these up into bite sizes), the tomato paste, the rice, and the cup of water. Mix well and bring to a boil, then cover pan and reduce heat to a low simmer. Simmer for 25 minutes. Stir occasionally. Then it's ready to eat. Enjoy!

I was looking for an idea for our typical Saturday late lunch and saw this, so gave it a try and it was perfect. the only change I made was a yellow bell pepper but that's just because in my old age I don't get along with green bell peppers too well, so keep red and yellow ones on hand for snacking. I also keep sweet onions on hand and they don't keep so well, so used a sweet onion. Came out really good. Thanks for posting it.
