Makes 2 cups Alfredo sauce
2 cups heavy cream 2 cups shredded Parmesan cheese Black pepper to taste
Put water for the fettuccine noodles on to boil adding 2 Tbsp of salt to the water. (yes, 2 Tablespoons) Add Fettuccine noodles enough for 2-3 people to boiling water. Cook until it reaches desired tenderness. In a frying pan, add 2 cups heavy cream and bring to a boil then simmer. (Yes, its not milk, it's cream, and this is to reduce it) Stir cream with silicone spatula as you add 2 cups shredded (not grated) Parmesan cheese. When thickened to desired consistency, add cooked fettuccine noodles by removing from pasta water with tongs and adding to frying pan with Alfredo sauce. (the pasta water provides the salt for the dish) Add ground black pepper and stir until thoroughly mixed and then plate and eat.

Sounds delish, but I would either simmer some minced garlic with the cream, or if you don’t want garlic, add a smidgen of grated nutmeg. But I like the idea of just using cream! So many alfredo recipes use butter and cream and end up greasy.

This sounds like something my wife would love! We just picked up a bottle of Piesporter from a winery we'd visited when we lived in Germany so wanted to try it (Kreuznacher Weinhaus Piesporter Goldtröpfchen Riesling Spätlese) and I think this will pair just fine, so now we have a plan. Well, almost. The challenge for me is usually what dressing to use for the salad. Maybe a yogurt-based dressing, like used on the Northern German cucumber salad?

Try to say the name of that wine 5 times, fast!!!
With all that creamy pasta, you might want a not-creamy salad dressing…maybe just some lemon juice, olive oil, and garlic, or something like that?
