Cooked my pressure cooker baked beans, ribs AND brisket today, as we were having a few family members from BOTH sides over to eat. Wanted a "different" potato side dish, so went to peruse the web. Found this, and it is what I made--w/my typical modifications: amazingribs.com/tested-recipes/potato-recipes/italian-pesto-potatoes-recipe/Here's my version: PESTO POTATOESINGREDIENTS
3# new red potatoes 3 TBS minced garlic 4 bay leaves
2.5 TBS pesto ( +/- to taste), which Monkey mixed with couple of drizzles of high grade olive oil (we used a garlic infused one), approx. 1 tsp
small block of Asiago cheese to grate ( 1/4 cup?) coarse kosher salt & fresh ground pepper (both to taste)

Put first 3 ingredients into a large pot salted water, bring to boil. Cook potatoes until al dente, drain. Discard bay leaves, but DON'T rinse minced garlic off potatoes Return spuds to pot, turn burner on low, shake potatoes to evaporate any remaining H20, shake/toss often. Leave fire on low, add the pesto/olive oil, kosher salt & freshly ground pepper. Stir these together well, then grate Asiago cheese over top--- again, to taste. Stir well and serve while nice & warm. Must've liked them, as this is what was left... And they DID pair well w/the BBQ meal!!!

Man does that look good! We just picked up a block of Asiago cheese today so I'm going to give it a try tomorrow. I don't have the potatoes but I do have a daughter who lives next door and works at Safeway, and I have her number! Home delivery and all I have to do is mention her inheritance.
