My Mater ALWAYS made 'tater salad for Easter---prolly to use up the THREE DOZEN EGGS she hard-boiled/dyed for all 8 of us!!! I think I took dyed eggs in my school lunch up till MOTHER'S DAY!! LOL This is very tasty IMHO, was my Mother's base recipe that I jazzed up a bit...

CHUCKIE'S TATER SALAD
¼ cup sour cream
¼ cup mayonnaise¼ cup German Vinegar*
¼ cup Dijon mustard + 1.5 TBS yellow prepared mustard, mixed w/1 TBS horseradish
1 TBS celery seed 1 TBS dill weed
1 tsp celery salt 1 tsp onion salt (might be too salty for some, can halve each or to taste)
Cracked pepper to taste 1.5 tsp sugar (+/-)
Whisk above together well, toss over:
5# potatoes, boiled until al dente. Peeled & diced to bite size (I used Yukon Gold today)
4 stalks celery finely chopped
1 bunch green onions w/partial tops, finally chopped
1 red bell pepper, finally chopped
5 hard-boiled eggs, peeled & chopped. Have an add'l egg to quarter & top salad for looks
6 Cornichores w/Herb Pickles finely chopped (Deutsche Kuchen brand, found @ Aldi's)**
Smoked paprika
Pour dressing over vegetables/diced eggs/pickles. Stir well to combine. Let set a coupla hours (best if it sets overnight). Stir well once more, quarter a hard-boiled egg to top the center of it for decoration, and sprinkle top of salad before serving w/smoked paprika. Was gonna post a coupla pix, BUT vgy's site "CRASHED", and said may be down a coupla more DAYS!!
*I only use Einmach Meister Hengstenberg Pickling Vinegar, found online @ Yummy Bazaar. Any GOOD German vinegar should be just fine, it DOES make a difference in the taste!!
**Monkey and I just LOVE these pickles, turned dwayner on to them when he was here!! This is the FIRST TIME I've used them in the salad--@ Monkey's suggestion--but YUM!!
