I thought I'd posted this out here YEARS AGO, but guess NOT!!! Below is my Auntie's recipe, a FAVE of us kids when growing up!!! CHEERS! Chuckie Auntie Peg’s Cheese & Pasta in a Pot2#’s ground beef (I use 1# hot Italian sausage to 1# hamburger) 2 crushed cloves garlic
2 med. onions, chopped 1 28 oz can diced Italian stewed tomatoes
1 – 14oz jar spaghetti sauce 8 oz (medium) shell macaroni
8 oz fresh or 2 cans mushrooms 1# sharp cheddar slices 16 oz sour cream 1 small pkg. shredded Mozzarella cheese Cook meat until brown, stirring often. Drain and add onion, garlic, spaghetti sauce, tomatoes, mushrooms—fresh sliced or canned (undrained). Mix well. Cook 20 minutes or until onions are soft. Cook macaroni; pour half of shells into deep casserole. Cover w/half the meat sauce, spread with ½ sour cream. Top with slices of cheddar cheese. Repeat, using rest of shells, sauce, sour cream, cheddar slices, and then top w/mozzarella. Cover casserole and cook @ 350 degrees for 30 to 40 minutes. Remove cover and brown cheese slightly. Serve with salad, garlic bread and red wine.
