After making the carrot noodles, thought I'd give these a try. I (basically) follow the Idlehour recipe, BUT double the eggs/salt/baking powder, as this is nearly a double recipe--mine took about 1 & 3/4 cups flour.
SUN DRIED TOMATO NOODLES
2 eggs
1/2 tsp salt
1 tsp baking powder
1 - 2 cups flour
1/3 cup sun dried tomatoes in olive oil
I measured out the sun dried tomatoes, then put them on a stack of paper towels, and patted them dry w/another paper towel. Place in food processor, process until minced very fine. I made a DOUBLE batch for the Chief's game, so here's one batch done, and the other tomatoes "drying out" on the towels:
When minced fine, break eggs one at a time in separate bowl, then add to processor (this keeps you from ruining a recipe by adding a BAD egg!!) Do same w/second egg. Turn processor on, after eggs/tomatoes are combined well, add salt and baking powder.
Remove top, add one cup flour, pulse until incorporated. Now here you're just gonna have to kinda GUESS how much more flour your gonna need, so don't add more than a SCANT 1/4 cup at a time, process each time until noodles form a nice, soft ball. You may have to "feel" the dough & take it out to get it "right"--again, may NOT take the whole TWO cups. IF you get it too dry, just add a tsp or more of H20 until you get it to said consistency. Knead a coupla minutes on a well floured surface, then ball up & wrap in plastic wrap. Let rest @ least 1/2 hour.
SPICY CHICKEN
Boneless/skinless chicken thighs, approx. 3-4 pounds
2-cans Rotel tomatoes
1-6oz can tomato paste
1-24 oz jar spicy spaghetti sauce

Take ball of dough, cut into fourths. Take one fourth, place on WELL floured surface. Shake flour on rolling pin, use your hand to wipe all around pin. Roll out 1/4 of the dough until VERY thin, flipping dough over/changing directions, and flour work surface AND rolling pin OFTEN while rolling. Repeat, laying sheets on a cooling rack for about another 1/2 hour.
Then cut noodles into desired size (we have a "wavy" noodle cutter I bought at Gronis Hardware that we LOVE).
Place cut noodles back on racks, let set until ready to use, cooking instructions follow chicken recipe. IF you're gonna dry them for later use, I'd only put them in a SINGLE layer so they dry thoroughly.

I cooked the boneless/skinless chicken thighs boiled in store-bought chicken broth, with the leafy tops of three celery stalks along w/four bay leaves. When chicken is done, save the broth, and cut the chicken up into bite-sized pieces, place in crockpot on warm. In a medium sauce pan, add tomatoes, spaghetti sauce and the paste. Stir well, heat until warm, pour over chicken:
Bring saved broth to a boil, add noodles and boil 2-4 minutes until done. Won't take long if you're doing them the same day, and you rolled them thin:
Add to crockpot and you're DONE!!
