I found this beauty out at our local Dillons---sterling silver choice beef boneless chuck pot roast. Just over 3#'s, about 4 or 5" thick, $5.99 pp, with a coupon for $1 OFF!! Fired up the (natural) gas grill on the deck, heated to 500. Put the roast on it's narrow side, and let it set a minute or two, and rolled it/repeated until outside edges nicely browned. Flopped it down to do the big sides for 5 minutes each, turning on the Chambers oven at this point for the 10 minute preheat @ 500. Here it is after searing: Then after applying two rather LARGE bay leaves, a can of mushrooms w/their juice poured over it----along with about a 1/4 cup Merlot---both to help "perk up" the gravy: Gas on 10 minutes for roast AND peeled/chunked potatoes placed in thermowell to mash later. I shall now put on my hat & gloves and head to the club!!
Home 3.5 hours later, here's what she looked like: Whisking the rue in the front---au juice & mushrooms awaiting gravy pan---as BBQ carrots start on back: Final product, served w/BBQ carrots & the cucumber & onion for a side, along w/fresh sliced tomatoes (not pictured) : Roast nice & moist, but I was thinking of RUMP roast or something that would've come out RARER, but this will NOT be pitched or fed to the dogs to be sure!!!

I just came in to cool down a bit (94 here last time I looked) and was wondering what to cook. I didn't think I was hungry but you fixed that Chuckie! That looks fantastic.
There are some good deals out there on food if you watch for them. Our daughter started working at the Safeway grocery store near us so we're learning all the ins and outs and it's pretty amazing. Our freezer is getting pretty well stocked.
Too late to thaw something for tonight but it's looking like we'd better get something out and do a Monday Sunday supper tomorrow.

That does look yummy! Although honestly, after three and a half hours, I don't care what cut of meat you have, it won't be rare. Unless you have a 20lb chunk of something. But you can't go wrong with a melt in your mouth pot roast, that's for sure!
