While Dwayner was here we had pretty much continuous discussions about cooking and Potato Pancakes came up several times. I don't remember what store I was in but I came across an early 80's cookbook with recipe for them that I thought looked particularly good and intended to try them while he was here but the plans outnumbered the hours and I never got to it. So, the end of last week I cooked some up for breakfast and like any good friend would do I ate Dwayner's share so they wouldn't go to waste. The recipe says to top them with bacon crumbles and warm applesauce and I intended to try the bacon but the applesauce as topping was so good that I never got to trying the bacon. I'll be making them again next week, maybe even for dinner (they recommend that as an alternative) so will give that a try too. The only thing I did different from the recipe was that I used 1 tsp. dehydrated minced onion vs. the 2 tsp. minced onion that it called for (I assume they meant fresh). I grated the 2 potatoes with the grater size that gave me about the size of hash browns but they were hard to get the water out so I'll try a larger size next time just to see. I pre-heated the griddle and then turned the flame down so the pancakes could cook a bit slower and cook the potatoes all the way through. I spread some vegetable oil on the griddle and I think I'll try putting a tablespoon or two of oil in the mix next time just to see. They turned out really good and really easy so there's really no need to change anything. I'm just a tinkerer, including when I cook. Here's the recipe:
Potato Pancakes 2 eggs 1 tablespoon flour 1/2 teaspoon salt 2 teaspoons minced onion dash nutmeg 2 potatoes, grated 4 slices bacon, cooked and crumbled 1 cup warm applesauce
Combine eggs, flour, salt, onion, nutmeg, and potatoes. Spoon 1/4 cup of batter into hot, greased griddle at a time; flatten and cook both sides until lightly browned. Sprinkle with crumbled bacon and spoon warm applesauce over the tops.

That sounds really tasty! I never liked potatoes growing up (my mom made plain boiled potatoes every single day), but now I love them. I will have to try these, even though you really confused me when you said that you liked the applesauce so much that you didn't try the bacon.

I meant to try them with and without bacon but the things disappeared from my plate so fast that I hardly knew what happened.

That is the way I fix them too, bacon if you got it. Also gravy, applesauce, sausages,turkey// it goes on. They take a bit longer to cook than you might think so be patient.

Sounds like latkes have made another convert! I use my mom's recipe which is essentially the same but we use the blender instead of grating them. You just need to be careful not to overblend. Sour cream is also excellent with potato pancakes. I've never had them with bacon; I think all the Jewish mothers on my husband's side of the family would just be spinning in their graves at the thought, but I'm sure it would be delicious!

I just HAD to post this out HERE after reading Nana's post, since you CAN 'let slip' some occasionally "colorful language" this versus the "other site"!!!

Nana, I still think about the beef bacon they served everywhere when I lived over in that part of the world. It was actually pretty darned good. And the soy based bits & pieces would be good too. Heck, now I'm going to have to try those, too.

Smoked anything tastes so good. The thing I miss most about NYC is being able to go to a Jewish or any eastern European deli and get great smoked fish. There's something about smoked whitefish. I could eat it all day.
