This is a dead ringer for chicken salad, just no chicken! Instead of chicken, you take a can of chickpeas (or more, depending on how much you want to make), Drain them and mash them with a potato masher or some such implement until there are no more recognizable chick peas. Even the canned ones are surprisingly hard to mash, so if you are cooking your own dried peas make sure they are really soft before you start. I think maybe next time I might try putting the peas in a gallon ziploc bag and use a rolling pin. But anyway, when you're done they will even kind of look like finely shredded chicken. Then just make whatever kind of chicken salad you usually make, using the chickpeas.
I added a good amount of finely chopped celery, finely chopped apples and walnuts, golden raisins, lots of finely chopped fresh dill(this time of year I have so much of it I add it to everything I can!), salt, pepper, mayo and dijon mustard. Use more mayo than you think--somehow the chickpeas kind of absorb it, so if you want it to be creamy you need to add extra.

I had to go to Wallyworld to buy smoking chips to do a brisket for tomorrow(now that the bastards ran K-Mart AND our local grocery outta business!! ) Whilst there, I bought a pound of chickpeas. I have them in the pressure cooker as I type. I think Monkey is also gonna add some of her mock chicken stuff to it as well, to give it a more "chickeny" flavor. I told her to taste it FIRST, and THEN add it--- IF she thought she needed it. I also forwarded your recipe on forewarned as "untried" to her veg-head brother & two nieces, BUT I said "it comes from a GOOD source"!!!.... Stay tuned... CHEERS! Chuckie

I did the "quick hot soak" pressure cooker method--bring to a boil w/salt and boil 3 minutes (I added approx. 3/4 tsp each of onion & garlic salt). Let stand 30 minutes. Then I drained & added ZERO salt, added enough H20 to cover, brought up to pressure for ten minutes, quick release method after that. OMG, were they're GOOD!!! I told Monkey I've never HAD them before, which caused a VERY dramatic eye-roll!!! Her two veggie nieces are coming to sup tomorrow night, and she's gonna make that mock chicky salad up for the three of them. I am also doing vegetarian (pressure cooker) baked beans chamberscommune.proboards.com/post/21988 and that "light" summer potato salad to go with it chamberscommune.proboards.com/thread/2922/light-summertime-potato-salad. Us carnivores will have brisket & ribs! I have a tart shell chillin' in the icebox for 30 minutes so I can bake w/a almond paste inner crust, to be filled up when cool w/a (fresh) strawberry/gelatin/cornstarch/sugar mix for dessert tomorrow. Also, thank you for reminding me of the potato salad! Since I'm weeding out dill by the handful, it was the perfect thing. FYI it tastes just as good with regular old brown deli mustard as with the fancy whole grain dijon, which we don't always have on hand.

Nana, would you happen to have any dill seeds that you would like to share/sell when they go to seed? I would love to have some good self-seeding dill in my garden. I planted some I got from Seed Savers Exchange that was supposed to be a reliable self-seeder, and... it wasn't. Plus, you're not too far from me, so I know it would be hardy here. I love dill.

I've never had dill self-seed like others seem to, chipperhiker. If I take the seed head and drop it in a pot, the dill will come up in the pot the next spring, but if I just leave it to fall on the ground, I get nothing. It's the same with bronze fennel, which I grow for the swallowtail caterpillars. For everyone else it volunteers all over the place. I have to divide the roots to get more plants.

Be careful what you wish for, Chipperhiker! Of COURSE I can give you buckets of dill seed! Like the poor, it will always be with me. I found that the first year I planted it, I only got a few volunteers the next year, and I wondered what my mom was going on about, about how borderline invasive it is. Then it got its footing, and it never looked back. I think it adapts itself to a particular environment, but it takes a year or two. It weeds out easily, though, and it dries overnight in the Chambers oven with the door cracked open a hair, so it's all OK.

I'll send you some of last year's seed, some of which I harvest to use in pickles, etc. PM me your address and it can be on its way. The saved seed doesn't sprout quite as readily as the seed that naturally falls off and spends the winter in the ground. I tried once to have a second crop so I could have fresh dill all summer when the cucumbers are piling up. I had some success by putting it in the freezer for a week or two before planting to make it think it overwintered. But I will gladly send you some of this years seed in the late summer. Just sprinkle it on the ground where you want it to grow the next spring.
