This was a BIG hit at crockpot night at the brewery!
Preheat oven to 350
1 package frozen chopped spinach, thawed and squeezed out 1 can artichoke hearts in water, drained and chopped up(I like it chopped pretty fine) 3 cloves of garlic, either minced very fine or even better, use a garlic press 5oz grated romano cheese ( I think any italian type grated cheese is going to be OK here) 2 cups grated Montery Jack cheese 3/4 cup mayonnaise
Mix all ingredients, place in a flat baking dish. You will be serving it out of this dish, so it needs to be something you can dip into. Bake until it is bubbly and lightly browned, about 20-25 minutes or so. I like to serve it with pita chips.
It is so delicious and easy!
Perhaps I should add that it is served warm, so if it starts to cool down it gets harder to dip into, so you can pop it in a microwave if necessary to reheat it.
