Happy Purim! A Jewish holiday, one of the few fun ones. Hamen was a bureaucratic suck up back in the old days who wanted to make himself look good by making the Jews look bad, and wanted to kill them, basically, for not being willing to worship the king as a god. Good Queen Esther, a secret Jew, let the cat out of the bag by pleading for her people, and since she was a fox by any one's standards, the king decided to kill that bastard Hamen instead. It is celebrated with cookies and noisemaking. Here are the cookies:
They are a cross between biscuit and cookie dough. Traditionally they are filled with poppyseed or prune filling, but since both of those are not really that popular these days, I use apple butter, myself. You can use any preserves you like.
3/4 cup sugar
2 cups flour
2 tsp baking powder
1/4 tsp salt
1/2 cup butter
1 egg beaten with 2 Tbsp orange juice
apple butter or jam or jelly of your preference
Sift dry ingredients in a bowl
Cut in butter by hand until mixture resembles fine meal (those of you with a food processor, just buzz it all together til it looks like cornmeal)
Form a well in the middle and mix in egg/OJ mixture til dough forms a ball.
Wrap and chill 2 hours, then roll out 1/8" thick. Cut 3 inch circles, place on greased or parchment lined cookie sheet and put 1 tsp of filling in the middle and pinch 3 corners up around the filling(for some reason Hamen wore a three cornered hat just like George Washington) Let chill 1/2 hour and bake 10-15 min until delicately browned.
My corners would ordinarily be neater, but the local brewery came out with a new product they call "Cup of Wonder" which is 9.9%, and we went up to have a few before baking time....so.....well, they are what they are.
