OK gang, I know there's LOTS of waffle iron aficionados out here, so thought I'd post this. Let me start by saying I have NOT made these, so cannot testify if they're good or not. Was perusing Yahoo news and came across it, thought you waffle fans might want to give them a go. Article goes on to state "they’re actually wonderfully airy and crisp, thanks to an innovative technique involving whipped egg whites and baking powder."

President Kennedy’s Favorite Waffle Recipe
½ cup butter 1 tbsp. sugar 2 egg yolks 7/8 cup milk, or 1 cup buttermilk 1 cup plus 1 tbsp. of sifted cake flour 1 pinch salt 2 stiff beaten egg whites 4 tsp. baking powder
1. Cream butter and sugar, add egg yolks. Beat. Add flour and milk alternately. This may be done at any time. When ready to bake fold in egg whites, and add baking powder. Mixture should be thick and fluffy.
2. Cook in a waffle iron and serve with hot maple syrup and melted butter.

How could these be bad, Chuckie? I will often beat the egg whites separately for extra fluffiness, so it's nice to hear it's an "innovative" technique! ;0 The cake flour must make them super tender. Thanks for adding to the repertoire.

I have been very lax in making waffles lately, despite my ever-growing waffle maker collection. I need to try these soon!

Made these this morning. My husband took a bite and said he feels presidential! They were very good--crispy, light and fluffy.
I made them with half whole wheat flour, half white, without the extra Tbsp of flour, and buttermilk(actually I used 3/4 cup yogurt thinned with 1/4 cup milk, but hey, cultured milk is cultured milk).They are a little more involved than my regular old fashioned Betty Crocker waffles, what with the egg separation and beating and folding, etc., but worth the little bit of extra fuss. They did seem to need a little more greasing of the waffle iron than my usual ones as well, but no big problem. A winner, Chuckie!
