Found this recipe today, but changed it up QUITE a bit. Here's the original:

Monkey had already pretty well "plucked" the basil plants to make pesto, so I used a ball of that instead of basil. Also, while reading comments below original recipe from website, we went w/Mozzarella cheese (I also DESPISE Brie!!), as we had Mozz around. Also, we just L-O-V-E "Garlic Expressions" salad dressing--DELISH!!! Only ONE store in town carries it--Dillons (nee Krogers)--and it's in the produce section, NOT w/salad dressings. And it AIN'T cheap! (pic of bottle in picture).
Anyhow, here's what I used/did:
1# Mozzarella Cheese, cubed to dice size
4 medium ripe-as-can-be tomatoes
1 ping pong-ball size of homemade frozen pesto, thawed*
2 - TBS minced "jarred" garlic
1/2 cup Garlic Expressions
1 small green bell pepper, sliced to dice cube size
1# curly pasta (we used Rotini)
1# hot Italian sausage, browned & drained (optional)
1. Roughly chop the tomatoes and put them in a large bowl. Add garlic, chopped peppers, and Mozzarella. Thaw pesto, add to mix. Pour Garlic Expressions over, stir WELL, let stand two or more hours @ room temperature.
2. When you are ready to eat, bring a large pot of heavily salted water to a boil and cook the pasta until just al dente. Strain it, return pasta to pan, and add sauce to hot pan to help melt cheese. Fold everything together until it is well combined, the cheese has begun to melt, and the pasta is slicked with cheese and tomato goodness. Serve immediately with a big green salad.
Again, I assembled in the 'hot pot' (to help cheese melt a bit), then put it back on Chambers--LOWEST setting--until garlic bread finished browning in broiler (3-5 minutes?). OMG, was it G-O-O-D!!! I scattered the browned Italian sausage over my carnivore portion.
DEFINTELY a "keeper" recipe!! Kinda "light & refreshing" for a HOT summer day!! And ALL the veggies fresh from garden!
