I keep meaning to take pictures but get side tracked at meal times.
First, fire up the broiler and let it run top down so it can be heating while you prep the zucchini.
Cut off the very top and very bottom of the zucchini, then split it down the middle the long ways to give you two halves.
Season each half as you prefer (I use salt, pepper, butter, and garlic salt)
Open broiler and place zucchini on the broiler pan cut side up, then close the broiler.
Cook time is between 5-7 minutes depending on the size of the zucchini.
I keep checking it until the top of the zucchini is very brown (from the butter)
Then it's done. Enjoy.

That's even easier than sauteing it! I am being flooded with the stuff right now. Sure wish I had Marilyn in my kitchen to help out!

Mmmm, I didn't plant a garden this year, but I will have to seek out some zucchini so I can try this!

You can substitute yellow squash for the zucchini and it comes out great as well.

It is good, I do mine on the grill and cut into 1/4" thick slices. Brush lightly with olive oil and season with S&P.
Here is another great grilling side:
1 green bell pepper 1 red bell pepper 1 yellow squash 1 white onion 1 stick butter S&P to taste
Thin slice veggies, place in a bread pan with the butter. Season with S&P. Put on grill (indirect heat) and let cook until tender while you grill your meats. Delish!

I planted my zucchini a bit late and they're just coming on. I don't want to wait but know I'll be overwhelmed with it in a week or so. We cook all year with it by shredding and freezing it but especially like it grilled.

My daughter made zucchini pancakes the other day which were fantastic. I'll get the recipe from her and post it.
