5 cups rolled oats (oldfashioned or steel cut) 1 cup almonds 1 cup walnuts or any other nuts you like 1/2 cup wheat germ 2 cups coconut 1/2 cup sunflower seeds
Mix in a large pan or roaster, you need to stir
1-2 cups raisins or crasins or other dried fruit(apple) 1/4 cup maple syrup 1/4 cup brown sugar 1/2 cup canola oil 1/4 cup warm water 1/2 tsp salt
Heat oven to 250 . Lightly grease a large pan or roaster. Mix the dry ingredients together mix well. Combine the liquids and heat if needed to dissolve the sugar. Pour over the oats and mix well to coat.
Raisins/Crasins may be added in the last 30 min. if not it will still be ok. Bake for about 1 hour and 15 min. stir every 15 min or so. Let cool and store in an airtight container at room temp.
Of course you can tweak the amounts a little to match what you have or like. Not overly sweet and heats well with milk or cream. Good cold too.

I made a batch of this on Friday.
I decided to fiddle with the recipe a bit, so I added 2 T. of cinnamon & 1/2 c. of pepitas (pumpkin seeds) to the dry ingredients & reduced the coconut to a bit over 1 c. (because I was using an organic dried grated coconut that was so fine I was worried it would make it all a bit powdery). In addition, I added 2 t. of vanilla & 2 t. of almond extract to the wet ingredients after I was done heating to dissolve the sugar & salt. It smelled wonderful as it was baking. Added about 1 1/2 c. raisins as outlined in the recipe.
In baking it I did adjust the temperature as I checked it every 15 minutes. I ended up raising it to 300 for about 30 minutes of the baking time & I also left it in with the gas off at the end for 15 more minutes, after the 1 1/4 hour with gas on. It turned out quite tasty, with just the right amount of crunchiness--not hard. Still smells great too!
