It came out fabulous! I like corned beef, but I was always a little put off by the flabby boiled fat, and the veggies were not my favorite. This year I rubbed the corned beef with a paste of equal parts spicy brown mustard and brown sugar, tucked quartered onions around the two pieces after I put them in my Lisk roaster, added a cup of water, and mostly followed the Baked Ham (glazed in baking) instructions in the Idle Hour. It’s for a 12-14 pound ham, and I had just under 10 pounds of corned beef, but I also had a sheet pan of carrots and a sheet pan of cabbage wedges to roast, so I upped all the times a little. After the 10 minute preheat, everything went in at 500 deg. at the same time, uncovered, for about 10-15 minutes, then I covered everything with foil, including the corned beef because with all that other stuff in there the lid wouldn’t fit on the Lisk, and let the gas run another 45 minutes, then gas off for 3 hours. The only thing I boiled was the potatoes, and we had them with butter and parsley, and I will never boil a corned beef again! It was just great!
