A galette, as I found out, is kind of a free-form pie/tart. You know how they say easy as pie? It should be easy as a galette. Roll out your crust to a nice big sort of circle, place on a cookie sheet, attractively layer on some nice fresh fruit leaving about a 2 inch border, sprinkle with sugar and whatever spices suit your taste, fold up the edge over the fruit and bake as you would a pie. This one is pear, with a bit of cardamom, ginger and cinnamon, and a few frozen cranberries tossed on for color contrast, made to celebrate my daughter receiving tenure at her school. I told her now she can pinch the kids when they don’t do their work!😉

Well, it is pi day. We're having cheesecake pie . LOL, Monkey's family has a monthly "bake off" challenge, and today's theme WAS "pi day"!!! Our two creations--Farmhouse Pie & Cheese/Asparagus Quiche--BOTH might tasty!! She used her cookie gun to do the purty taters:

She also made her light-as-a-feather cheesy biscuits using the White Lilly Flour her S.I.L. brought up from Florida. I hear it's ONLY available in the South? Our flour here is made with that hard red winter wheat, White Lilly is made from a softer variety...
I was NEVER a biscuit fan, until she started making them using THIS!! And no "secret recipe", she uses the one on back of the sack, and throws in about 2/3 cup shredded sharp cheddar as she mixes.

Thanks Chuckie! High praise coming from you! And that is one professional looking quiche! I read about that white Lily flour in an article about all the different kinds of wheat. It was a real eye opener. I always thought wheat was just wheat, but there are a bunch of different kinds, and then the different blends...It would take real effort and dedication to learn all the different kinds and how they bake. A flour for every purpose under Heaven!
I was worried the galette would break apart when I went to slide it onto a platter, but it baked up nice and crisp. No soggy bottom. I put it on the bottom rack for the first half hour, then the upper middle for the second.
