Well, a guy I worked w/@ the funeral parlor is dying of cancer, and his birthday was yesterday. I asked him if he STILL liked his sweets, he said "HELL YES!!" Asked him what he wanted, he said "apple pie is my FAVORITE!!"
Monkey made the crust, I did the filling. Here is the filling recipe, I think Monkey's favorite pie crust recipe is already out here. I'll check & see & link it in if so...
MONKEY & CHUCKIE'S DEEP DISH APPLE PIE
1 TBS lemon juice
1 TBS Berentzer Apple Liqueur (can omit if you want, but MAN, do it add flavour!!)
Prep apples, put in Ziplock w/juices, shake well. Season with:
1/4 cup brown sugar
3/4 white sugar
1 tsp cinnamon
2 TBS flour
Place in hot Chambers, set timer for 35 minutes. Remove shield @ 35 minutes, let pie bake 15 minutes longer (50 - 60 minutes total, ours was PERFECT @ fifty!!). Let cool a bit, then top warm pie w/ice cream and DEVOUR!!!
Here's a pic of the finished project. And NO that is NOT an oblong pie plate, it's a round glass Pyrex, BUT Monkey didn't adjust for the handles too well so it LOOKS that way!! LOL

Preheat oven to 425.
3# Granny Smith apples, peeled, cored & sliced (we used the apple peeler that does it all for you)
1 TBS lemon juice
1 TBS Berentzer Apple Liqueur (can omit if you want, but MAN, do it add flavour!!)
Prep apples, put in Ziplock w/juices, shake well. Season with:
1/4 cup brown sugar

1/2 tsp nutmeg
1/4 tsp salt
Mix the above dry ingredients together in a bowl, put 1/3 on apples in bag, seal/shake hell outta it, repeat two more times. Then gently massage the spices into the juice/apples.
2 TBS butter, sliced into thin pats.
Make your favorite pie crust to fit a 10" deep dish pie dish. Gently shake apples AGAIN, then hand-fill pie crust so as to NOT get too much juice to make the crust soggy. Dot top of apples with butter pats. The leftover juice is a TREAT for the cook!!! Monkey also makes those little cinnamon/sugar pinwheels like her Mom did outta the leftover crust. We dipped those in the juice after they baked, and O-M-G good!!! Just roll out leftover crust like making cinnamon rolls, sprinkle w/cinnamon & sugar mix. Roll up, cut & bake on their sides on a small pizza stone till done (WATCH carefully!) Pic of pinwheels (DON'T lay them FLAT when cooking):
Top pie w/other crust, cut a coupla vent holes & prick w/a fork a few times. Sprinkle lightly w/granulated sugar. Cover edges w/10" pie crust shield.
