I want to say a big thank you to everyone who ever mentioned Ro-Tel tomatoes. My mom never bought them, so I never tried them either. The label always looked a little hokey to me, too. Well that should teach me a lesson not to judge a book by its cover! I figured so many people on this forum mentioned them casually as a standard ingredient that I should try them. Boy Howdy! I got a couple cans of the fire roasted tomatoes to make chili mac for crockpot night. Jeez, you start with that and your chili's half made right there! It was a hit, and I'm grateful for the introduction to a whole new world of tomato cookery!

My sister told me about Ro-Tel tomatoes when she brought chili to a family picnic. I decided to give them a try in place of regular tomatoes in a bunch of different things and I was sold too. I never thought about chili mac so am going to have to give that a try!

It's just whatever regular chili you usually make mixed with cooked macaroni to stretch it out to feed a crowd! I mix a bit of cheddar in with it and sprinkle a bit more on top. Make it a little saucier because the macaroni will soak up some of it. At a potluck where people are standing around and holding beers too, it's easier to eat than a bowl of chili and a separate piece of corn bread, which is what I usually have with chili.

That sounds delicious. I almost made that last week with leftover chili, but went with spoonbread instead! I still have to try your recipe, nana as it's a fave for me. I have a cookbook devoted to it with well over 300 recipes! It's really popular a bit south of me in central Ky. I so agree about Ro-tel. I don't think I commented on that post, but myu family was introduced to it many years ago by my Mom's BF from Va. She made a dip called Ro-tel which is just cheese and a can of Ro-tel heated together..... YUM! It's a great QUICK dip and can be varied with different cheeses. I think she used Velveeta! and also cheddar.

I use them in about EVERYTHING I cook that has tomatoes in it--baked beans, chili, that smoky & spicy mac-n-cheese that I posted out here, also the ribs w/kraut that I cook in the well or oven, etc. It SEEMS to me like the Aldi's brand is W-A-Y hotter than the regular brand-name Ro-tels!! Where I work, they use an Angelia Mia brand of fire roasted diced tomatoes in some of their dishes. I suppose it's the roasting that intensifies the flavor well above that of just regulator tomatoes. Ro-Tel's method, or the type of tomatoes they use must account for their superior flavor.

Ro-Tel's method, or the type of tomatoes they use must account for their superior flavor. Angelia Mia sounds Italian. The Ro-Tels lean towards the Tex-Mex side, with chili peppers in varying strengths and combinations. It's a whole different flavor profile. But I will try to always have some on hand for chili, tacos, enchiladas...They are GOOD!!

One of the biggest disappointments of my dad's life was when he realized that Ro-Tel tomatoes were regular tomatoes with green chiles added. For some reason he thought they were a new variety of spicy tomatoes and he was ready to plant a giant garden full of them!

For some reason he thought they were a new variety of spicy tomatoes and he was ready to plant a giant garden full of them! I know this dude who messes with plant genetics (Dwayner)! Maybe we need to get him working on a tomato/green chili cross. They're in the same family if I remember right. I think I'd start out trying them on a BLT.
