I have a Wear-Ever number 4455 pan that I got from a restaurant that was closing and it has been my go-to pan for a lot of things. I thought I'd be retiring it with the size of Pepper's oven when I first checked to see whether it'd fit. It's 18 5/8" long x 12 5/8" wide x 2" deep and the first time I tried it in the oven the door wouldn't close. I decided to check again and it turns out that when I tried it the pan was hitting the clips for the thermostat bulb at the back of the oven. Moving the rack up or just using the bottom rack it fits - just barely. Somehow I always get roped in to making big batches of Chex Mix for parties and this is the only pan that I can do 16 cups of cereal plus the mixed nuts and the pretzels and still be able to stir it every 15 minutes without it spilling over the sides. I was really happy to see it'd work. I guess I'll still get an invite to the parties. Here's a picture of the batch I just finished:

I can't see the picture, but I bet it looks yummy. I worry about banging into the capillary bulb with a big pan or cookie sheet. Sometimes you want something to be on that level, though. The clips just don't seem to be that much protection.

The main thing was the pan to show just how big of one will fit. I was really surprised that it did after I had tried it when I first put the stove in. The Chex Mix is pretty standard except that I add Cheerios. You have to wait until after the first 15 minutes in the oven to add the Cheerios or they'll soak up all the butter. I do two batches, the second one gluten free, so just leave out the wheat Chex and the pretzels and adjust down the butter/Worcestershire sauce/seasoning salt mix. The first batch of gluten free I made was just a standard mix recipe and I left out the wheat Chex and replaced them with Cheerios and I had to make a second batch and add the Cheerios later since the Cheerios soaked up everything in the first batch. Came out perfect the second time and the standard size batch wasn't near enough. I had no idea that there were so many people on gluten free diets. We go out every year and help get the Girl Scout camp ready for the campers and this is the week for it so I'm ready for my part. And my chainsaws and I have the chipper mounted on my tractor and ready to make chips for the horse corrals. If I show up without the equipment I'd be okay but they'd probably give me the boot if I show up without the Chex mix.
One other note, I preheated until the flame dropped into bypass and then ran the gas at 250F for the first two 15 minute stirrings. After I put the pan back in after the 2nd stirring I shut the oven gas off, did one more stirring after 15 minutes and put it back in for the final 15 minutes. In spite of the fact that I had opened the oven door to take the pan out and stir the mix and again to put it back in the oven, the temp was 210F when I pulled the pan out the final time and I swear that this turned out to be the best batch I ever made. I'm sure part of that was because I have a safety system and the pilot is still burning with the oven turned off, so heat is replenished to some degree. My next batch I'm going to try shutting off the gas after the first 15 minutes since I can always either run the gas or extend the time in the oven. This is a pretty safe one to experiment with.
