Made a purchase of #50 of Yukon Golds and they don't keep well. sooo. This is almost better as a cold leftover potato dish:
Fenugreek Potatoes
6 large potatoes, cubed and boiled ( I cottage sliced mine) 3 Tbls oil 1 tomato chopped onion (optional) 2 tsp fenugreek 1/2 tsp cumin 1/2 tsp turmeric salt and pepper
Peel and cut potatoes, boil and drain. Keep warm while fixing dressing.
Heat oil and add spices. Simmer to a bubble about 4 mins. add tomatoes and onion. Simmer until veggies start to get soft. Add potatoes and toss to coat. Reheat for about 5 minutes. Salt and pepper to taste. Serve hot or cold. Splash with a Tbl or so of lemon juice before serving. (Nice but not necessary, I usually forget to do it)
This is an amazing dish and cold is just as good as hot. Good with other veggies too. Peas, carrots, cauliflower. I think the Gold potatoes hold up better than russets but with #50 of each kind I can afford to be choosey. (They were $8.95/ each #50 bag)

Great price! Cheap like borscht, as my dad always used to say. Fenugreek is one of those things I have to admit, I've heard of it...but I don't really know what it is! From the amount used, it is apparently a spice. What sort of spice is it?

Indian and Asian uses. Powdered, it has a scent of maple and is not hot. Adds a savory sweetness to a dish without sugars.

This sounds great! Can I use whole seeds or do I have to grind it or do you mean the leaves? I have both.

Vaporvac, My directions called for cumin seeds, but I used was powdered because that is what I have. The turmeric and fenugreek is powdered in the instructions.
I just added the lemon juice in the recipe above, I forget to add it when I make this so forgot it AGAIN! . It brightens it up but is not required.
