OK, I made this tonight, as I was hungry for fried chicken. I found a coupla recipes online, then "adlibbed" my own. Here goes:
CHAMBERS OVEN FRIED CHICKEN6 skin on chicken thighs
1/4 cup flour mixed w/1/4 cup Bisquick (This particular 'flour combo' is what our local "famous" fried chicken place uses---but they fry theirs in
LARD!)
2 eggs, beaten
1 cup Italian breadcrumbs
1/4 to 1/2 cup oil
Preheat Chambers to 350. Roll thighs in flour mixture, shake well to remove excess. Dip in whisked eggs, then into breadcrumbs. Place 1/4 to 1/2 cup oil in pan (I used a Lisk roaster insert). Place prepped chicken
skin side down in pan. Place in hot oven, set timer for 30 minutes.
When timer goes off, remove pan, flip chicken, place back in oven for additional 30 minutes. Remove & serve.
It was "good", but nothing to write home about. Mine was
JUST lightly browned, so I put them under a hot broiler for about 3 minutes until crisped up. Next time will take
OUT of grease pan and place onto a parchment paper lined baking sheet
BEFORE putting under broiler---might "crisp" it more!
Again, it was "okay for family", but I don't think I serve to "company" until maybe "tweaked" a bit more...
Now mind you, they were
NOT much browner than the backside of the front "left" piece before I put them under the
BROILER, but they
WERE thoroughly
COOKED before the broiler...
