I forgot about this recipe for a long time. I used to make it all the time for my kids' lunchboxes and after school snacks, but it kind of dropped off the radar. I made them this past weekend to take to our friend Dave Pressman's 90th birthday party. They are a cross between brownies and banana bread. The party and the bars were enjoyed by all!
1/2 cup softened butter 1 cup sugar 1 egg 1 tsp vanilla extract(I always up it a little) 1 1/2 cups mashed ripe banana (about three medium) 1 1/2 cups all purpose flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/4 cup cocoa
Preheat oven to 350*
In a medium sized bowl, cream butter and sugar. Add egg and vanilla, beat until thoroughly combined. Blend in bananas. Sift together flour, baking powder, baking soda, and salt. Add to creamed mixture and mix well. Divide the batter in half, and add the cocoa to one half, and spread that half in a greased 9x13 baking pan. Spoon the remaining batter on top and swirl with a knife. Bake for 25 minutes or until they test done with a toothpick. Cool, then cut into bars.
It's a thick batter, but as it bakes it will smooth out. They are yummy, moist and a bit chewy, but not too much. AAnd very easy, and a good use for when you have more bananas than you can finish!

A-ha! I'm finally considered an expert on something! All I can say though, from my own experience, is it seems certain devices such as my old ipad, send pictures in funky ways unless you take them with the ipad in the correct position. While I think it is possible to adjust the picture to be oriented properly after the fact, it's just easier for me to remember that if I want to post a picture here I need to take it with the power button on the right. This I discovered through trial and error. And that's as far as my expertise goes. Unless we're talking banana bars. I'm pretty good at those!

I tried several times to get it right. I guess next time I go to storage to see my stove, I will take better pictures at different rotations to see if I can correct.

Your avatar is upside down, as mine used to be, but pictures posted in threads will right themselves when you click on them. Don't stress! I went a long time before I figured it out. I think I even started a thread, on this site or the other one, about my crazy avatar. I think the cruelest thing computer nerds ever did to the rest of us was to have different systems and "platforms" that are all incompatible with each other and get outdated every six minutes, so that they could be all "just do these fifty simple steps to post a picture" and make us all feel incompetent. I'm a good cook. I suck at technology. So be it!
