I first posted this sauce with this recipe: chambersrangers.proboards.com/thread/4992/chicken-pasta-dieWith a few mods I made this dynamite Alfredo type sauce a stand alone sauce for chicken, pasta, or whatever. 3 Tbsp Butter 3 Tbsp Flour 1 Clove Garlic crushed 2 Cups chicken broth 1 Cup Heavy Cream 1/2 Cup Grated Parmesan Cheese 1/2 tsp Oregano 1/2 tsp Thyme 1/2 tsp Basil Optional: add 1/2 cup Sun dried tomatoes or Ro-tel diced tomatoes with green chilies. Melt 3 tablespoons butter in a large cooking pot on stove top over medium high heat, add crushed garlic. Add 3 tablespoons of flour to pot to make a roux, whisk together and allow to cook for at least 90 seconds to cook the garlic and flour. Add 2 cups chicken broth to pot and whisk together, cook until it begins to thicken. Stir in heavy cream, diced tomatoes, Parmesan Cheese, thyme, oregano and basil... Bring to a boil. Reduce heat and simmer until thickened, about 3-5 minutes. If you like your sauce thinner, add more chicken broth. If not thick enough, you can easily thicken more with some biscuit 'n gravy mix.

As always, you had me at heavy cream. If there is anything better for a sauce, I don't know what it could be! This sounds yummy! And I have all those herbs in my garden and will be drying them for winter use pretty soon.
If you leave out the tomatoes and italian herbs you could probably do this sauce with lemon and rosemary, my favorite combo with chicken. Darn, I'm getting hungry now!

I made this tonight because I needed some comfort food after the day I had. I sauteed bacon with the garlic, and added a bit of chopped swiss chard to the pasta the last minute or two of boiling. No tomatoes. Fresh herbs really make the dish. I used dried basil because my new plants are too tiny to harvest from yet, but plenty of thyme and oregano. It was delicious! Thank you! We couldn't stop eating it. The two of us ate 3/4 of the pound of penne, not even enough leftovers for another meal for us. And so easy to make. Another winning recipe from Chambersland!

I tried using bacon last night and it was awesome also... a bit different tasting than the one I posted above, but real good none the less!!!
