My friend Denise brought this to a gathering. I loved it, could barely stop myself from hogging it all. I could not figure out what was in it, so I asked. It is not a combination I would have ever thought of myself, but it is tasty as heck, and very unusual. Guaranteed that no one else will bring it to the potluck. I always give her credit when I make it!
2 cups shredded sharp cheddar(I like Cabot's seriously sharp, in the red plaid package) 1 cup mayonnaise 1 bunch scallions, finely chopped. (Just use the white and light green parts for a better looking dish) 1/3 cup finely chopped toasted pecans or walnuts red raspberry jam
Mix all these ingredients in a bowl and let chill for at least a half hour. Then spread in a shallow bowl or high sided serving plate. A pyrex or nice ceramic pie plate is good. Top with red raspberry jam. Serve with crackers, but it's also good with celery sticks. The green parts of the scallions don't hurt anything, they just look weird with the jam.

It's not intuitive, but give it a try. Make a half recipe if you don't want to commit to too much at first. It is strange, but it works!

I looked this up for a quick reminder and to make sure I had the ingredients ready, and realized I never put the raspberry jam in the ingredients list! So I edited it to fix my error!

Nana - how do you think salted toasted pecans would work? I always end up with excess from mixed nuts and have chopped them in the food processor to use in other recipes. So far the recipes have been ones that called for salt, so I just leave that out but don't know how that would be in this case. I suppose I could rinse them in a colander and then dry them in the oven before chopping them.
