Made these just now, they're in the icebox setting up. VERY easy to make--but takes longer than the 15 minutes they claim!! LOL. Will post below too, in case link "dies". Recipe reads it makes 22; I got THIRTY outta the coconut mix, but the one bag of dark chocolate only did 24--and I was REALLY scrapin' the bottom to cover the last one. Another thing I would do--as all I used was black walnuts--would mix them into the chocolate. Would be easier than sprinkling on top & using a spoon to 'press in' as I did...

Quick and Easy Chocolate Coconut Bites
Ingredients:
3 cups unsweetened shredded coconut (a 5oz bag = 3 cups) 6 Tablespoons honey 1½ Tablespoons melted coconut oil (I used 2 TBS) 1 teaspoon pure almond extract (or vanilla) (I used almond) Coating: 1½ cups dark chocolate chips (for coating) (one 10 oz. bag did 24 of them) ½ cup finely chopped nuts (I used black walnuts, broke them up in pestle & mortar) (next time will use ALMONDS, to make like 'Almond Joys') 1 teaspoon flaky sea salt (optional)
Instructions:
1.Line a mini muffin tin with paper liners (or grease it very well) (I used liners) 2.Whir coconut in a blender or food processor until very finely ground. (mine didn't get any smaller than say white rice) 3.Add honey, coconut oil, and extract. 4.Process until well mixed. 5.Remove from processor bowl and press 1 Tablespoon into the bottom of each mini muffin cup (I used a melon baller/cookie dough thingy). Refrigerate. 6.Melt chocolate chips over, not in, boiling water. (I put in microwave on defrost cycle until softened, approx. 2 minutes. BUT remember, our kitchen is currently EIGHTY-EIGHT w/the ac out!!) 7.Spread evenly over the coconut layer. Sprinkle with chopped nuts and flaky sea salt or coconut. Return to refrigerator to chill. ---------------------------------------------------------------------------------------------------
UPDATE: JUST unwrapped/ate one. OMG, they are DELISH!!! Look kinda 'sushi-ish', eh?

Oh my God a homemade Almond Joy I'm in heaven!!!! Would you like to trade places Chuckie? Today's HIGH here on June 12th was 54 degrees. I actually built a fire in the woodstove. I could use a little summer weather right around now.

Mine are in the fridge setting up right now. Judging by the taste of the filling, these will be divine. I used orange blossom honey and vanilla extract, but I'm thinking I would like to try lemon extract next time. There's a chocolate shop in town that makes dark chocolate and lemon truffles which are fantastic. I thought it would be too weird of a combination until I tried it. And I already know I like lemon and coconut together...
Chuckie, I'm surprised you did not use your thermowell to melt the chocolate! I just put the chips in a pyrex measuring cup and set it right on the grate, and melted with the gas turned off. Worked like magic. I made 46(!) and pressed an almond into the coconut, and then poured the chocolate on top. I ended up using most of a pound of chocolate chips, so definitely you need more than what that recipe states. Looking at your picture, I think mine will be less coconut/more chocolate than yours. Or maybe my melon baller is smaller. Whatever. They were easy and fun and I will report back as sooon as I can on how yummy they are most assuredly going to be!

LOL, I just made them again today for the Eagle's b-day party tonight!! I too used almonds this time. The unsalted ones we bought @ the store were smallish, so I pressed TWO into the coconut mixture--one on each side. They are already set, s-o-o-o-o tempted to try one!! LOL I used 1.5 bags of chocolate chips, and it easily covered 30 of them--which I came up w/again. Eagles will only get twenty four, as I am holding 12 back for moi!! As you said, thermowell would work just fine, but both times I've been in a big-ass hurry, so I nuked! Hope yours taste great too! CHEERS! Chuckie

Chuckie, they were amazing!! Thank you so much for posting this recipe. It's so easy and delicious and also impressive to bring to a pot luck. Everyone who's tried it says Wow. I like the possibilities for customizing, but the original is just great too. My daughter suggested putting a layer of chocolate on the bottom, under the coconut, but I don't know, I like the half and half aspect. I don't want to overwhelm the coconut with the chocolate. Any way you do it, these are a keeper!,

Any way you do it, these are a keeper!, Just "bumping this up",as I made these again today---MAH-velous!! I pressed two almonds into the coconut mixture, didn't refrigerate, poured the chocolate over, THEN refrigerated. As an aside, I used 12 oz of chocolate chips (2 cups in there, per bag), and 6 of those dark chocolate cooking squares (2 oz. more), was NOT enough to do the 36 I came up with. So I melted 1/2 bag more of chips, used three more mini bars of baking choc, and gave the leftover to Monkey (she DESPISES coconut! ). She poured some peanuts and whole almonds into the melted chocolate, stirred them in, then used a tablespoon to spoon them out onto a cookie sheet covered in wax paper. So that means EVERYBODY gets their fave treat today! CHEERS! Chuckie

How did I miss these last year. Almond Joy made to order! I made these today as part of our Christmas goodies. I have updated the recipe to read "3 cups of unsweetened coconut = a 5oz bag". I will ALSO add that when I FIRST made these in 2016, same brand of coconut came in a SEVEN OUNCE bag!!! And I'm SURE the PRICE didn't drop along w/the SIZE!! *sigh* CHEERS! Chuckie

I seem to remember reading an article about Hershey changing the size of the nickle chocolate bar when the price of sugar fluctuated back when there was such a thing as nickle candy. They just didn't want to raise the price for any reason. I don't recall when they gave up on the nickle price & just raised the price. I looked it up & in 1900 their first bar was 2 cents.

Coffee, sugar, tuna...even pasta sometimes comes in 12oz boxes, so if you're making it for a family dinner, you better check that net weight first. It's annoying, yet they always say "it's to serve you better." I'm not going to stop buying sugar if the price goes up or the size goes down because when you need it you need it. I may use less if it gets really pricey, but I would do that no matter what size package they sell it in. I just dislike feeling like THEY feel like they're fooling us, if that makes any sense!

For a while I refused to buy bacon in the 12 ounce size, but I doubt anyone noticed my protest. Now we buy the 3.5 pound package at Sam's. Take that, downsizers! (Although it occurs to me that maybe that used to be 4 pounds. Hmmm...) I am going to have to try these coconut bites. Coconut and chocolate are my two favorite food groups!
