When searching amounts for this online(Mom never had a 'written' recipe), I found it named this SEVERAL times, and I liked the name, so I hijacked it! It is the orange Jell-O one I spoke about--BUT all the online recipes use LEMON Jell-O--my Mom ALWAYS used ORANGE!! Also, they call for 8, 9 or ten ounce cans of crushed pineapple. We had 20 oz. can on hand, so guess what we used?! Lastly, none mention the walnuts, but Mother ALWAYS used those as well.
This one is GUARANTEED to please--both young and old--has a VERY nice taste/texture to it! And it always "looked purty" when Mom unmolded it! I found a "purty picture" of it online, but said content AND picture was copyrighted. SUNSHINE SALAD
2 - 3oz boxes orange Jell-O (I used sugar free)
2 - cups boiling H20
1 - 8 oz. up to 20 oz. CANNED crushed pineapple*, drained (SAVE JUICE)
Enough ice water to make 2 cups when combined w/pineapple juice
1.5 cups grated carrots (I like 'em done on home grater; IF you buy store ones--we did this time--chop up a bit finer)
1 to 1.5 cups black (preferred) or English walnuts--can omit if worried about allergies
1 Empty gelatin into a small mixing bowl. Stir in 2 cup of boiling water. Whisk until the gelatin has thoroughly dissolved.
2 Stir in the 2 cup ice water/pineapple juice combo.
3 Chill in refrigerator until the gelatin starts to thicken (until it is the consistency of cold egg whites - but not set). Then gently fold in the grated carrots, pineapple chunks & walnuts until well mixed.
4 Add mixture to a jello mold. Set in the refrigerator until firm, several hours. To unmold, dip the bottom of the pan in hot water for about 5 seconds. Invert onto a serving platter, and shake firmly to release. Slice to serve.
* Do not use fresh pineapple as it contains protein-splitting enzymes that will prevent the gelatin from setting. Websites called for 8, 10, & 12 oz. cans; we had 20 oz. & used no problems.
