I thought I had posted this "over here" as well, but I had not. I posted it in the middle of another post I "hijacked", so thought I'd better post alone so folks can find it...
PRESSURE COOKER BAKED BEANS
1 Cup each (dry) Pinto, Great Northern & Kidney Beans
1 tsp baking soda
Sort beans, put in cold water w/baking soda, boil for 3 minutes. Remove from heat, let sit for 1/2 hour, then drain & rinse.
Mix all below ingredients together whilst the beans sit for 1/2 hour:
1 large onion chopped
3TBS* each--brown sugar/molasses/ketchup/Worcheshire
1 TBS garlic powder (or 2 TBS minced OR two cloves fresh, minced)
2 tsp dry mustard
1 tsp salt
1 TBS A-1
2 TBS Liquid Smoke
1-10 oz can Rotell Tomatoes, Original Recipe (can use store--CHEAP--brand--I do!)
1/4 - 1/2 cup Gates Original BBQ Sauce (to taste)

IF you want to add meat (i.e. 1# salt pork or 4 slices bacon) cut into bite-sized pieces & brown now in open pressure cooker, leaving juice & meat. IF I use meat, I use bacon ends-n-pieces and some smoked ham shank(s). Normally make vegetarian due to Monkey.
Add beans and above ingredients. Add JUST enough H20 to cover, stir well (after first pre-boil will not absorb much water). Bring pressure up to 15 pounds, cook 40 minutes, remove from heat. Let steam return to down position by itself (approx. 1/2 hour). Put fork tines under pressure gauge, gently lift up to make SURE steam is down; 'hissing' indicates still under pressure. Remove gauge when pressure down and then remove lid.
This will almost make a full crockpot of beans.
*can use scant 1/4 cup instead of 3TBS (FYI, 4TBS = 1/4 cup)
