Well, I HOPE I've posted this to the correct place, as it IS vegetarian! Monkey as you may know is a veggie--NOT a vegan--and she used to ALWAYS buy that "Freedom" bullion--in that it was meat free AND kosher I believe as well. Anyhow, our local stores QUIT carrying Freedom brand. I was going to make her vegetarian dressing when her & her Mam were driving back from St. Louis, as I had stuffed a porkloin with dressing for the former and I. Went to the cupboard, NO 'Freedom' chicken bullion LEFT!
I thought, WTF, there has GOT to be a recipe for phoney chicky stuff online, and there WAS!!! Here's where I got it from, and I'll post the recipe below--should the link "die"--my notes are in "red":
www.food.com/recipe/mock-chicken-seasoning-326959
==================================================
1 cup nutritional yeast (hard to find--Dillons carried it)
2 teaspoons onion powder
1 teaspoon onion salt
1⁄2 teaspoon sage
1⁄2 teaspoon marjoram
3 tablespoons parsley flakes (rubbed to a powder) {did ours in a pestle & mortar}
1 1⁄2 teaspoons garlic salt
1 1⁄2 teaspoons celery salt
1⁄4 teaspoon savory (hard to find as well)
======================================================
You can dissolve a TBS in boiling water (one cup) to make similar to Lipton's Chicken Cup of Soup--I broke up some spaghetti noodles fine into a cup like said soup comes, and poured the boiling water over, stirred & let set approx 3-5 mins---EXCELLENT!!!
As for the veggie dressing I made Monkey, I just sauteed some mushrooms/celery/onions in butter with some ground sage until translucent, then dissolved 2 TBS of above in 2 cups H20. Had dried bread crumbs in a large bowl w/dried cranberries, added the other ingredients above, and enough seasoned water to make it the right 'moist', then baked uncovered in thermobaker 15 minutes gas/45 minutes (or longer) CWTGTO...
CHEERS!
