Here's a recipe I tried yesterday from Monkey's "Million Recipe" disc--we STILL have fresh pumpkin coming out of our ears. Came out VERY good! I modified it from the original--it called for one & a half cups of white sugar--I changed it to a total of 3/4 cup of BROWN sugar--still VERY nice. Also, called for 1.5 to 2 cups raisins--I DESPISE raisins--so deleted them. I also added the 3/4 cup black walnuts that were not in the recipe. ENJOY!
PUMPKIN/BLACK WALNUT BREAD
2 c. flour
3/4 c. brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg
1 1/2 to 2 tsp. cinnamon
1/2 tsp. ground cloves
1 c. (2 sticks) butter, melted
3 eggs, slightly beaten
2 c. (16 oz.) fresh pumpkin (or canned)
3/4 c black walnuts
Preheat Chambers to 350 degrees. Grease & flour loaf pans (I used five mini pans). Beat flour, sugar, baking powder, soda, salt, nutmeg, cinnamon and cloves together. Add melted butter, eggs, pumpkin and mix well. Stir in nuts (this is where it was the stir in raisins part--IF you want to add those nasty things! ).
Divide batter mixture evenly in greased loaf pans. Bake at 350 degrees for 1 hour. When toothpick inserted comes out clean, dessert is done (when I did the mini pans, I checked them in 20--no wheres NEAR done--then let them go another 10 & they were PERFECT--so a total of ONLY 30 minutes. I suspect you could go the last 10 on the mini loafs CWTGTO). Cool loaves about 10 minutes. Remove from pans, cool to room temp on racks then wrap in Saran Wrap or put in ziplocks. This dessert freezes well. Yield: 2 (8 1/2 x 4 1/2 x 2 1/2 inch) loaves or 5 baby loaves. .
The mini loaves would be GREAT as a mailman or teacher gift or to include in a basket of goodies for a friend.
