This is one of Monkey's family's fave recipes, from a friend of her Mom, Dorothy Stock. I made it today on the thermobaker. Will have to post later how it came out! Original recipe below for oven, adapted to thermobaker below that.
Dorothy Stock's Cheesy Potatoes
Boil 6 to 8 large spuds w/jackets on until just al dente--approx 20 to 30 minutes; place in ice water so you can handle them. Peel & cube (I use a spoon to peel)
In large bowl, combine potatoes with:
½ green bell pepper, diced
1 small jar chopped pimentos, drained
½ chopped onion
½ # grated American or Velveeta Cheese (I use sharp cheddar)
½ cup melted butter
¾ cup milk
Salt & pepper to taste (I use fresh ground pepper)
1 – 4 oz can diced green chilies (optional)
Place in greased 9 x 12 casserole. Cover & bake @ 325 for ½ hour, or until good & bubbly. Remove cover, bake for another ½ hour or so, until cheese has browned a bit.

That is the original recipe. For the thermowell, I have a round two quart Pyrex baking dish w/a lid that barely fits in the thermobaker. I used only 1/3 cup milk, about 1 cup cheese & 1/2 stick (1/4 cup) melted butter (didn't want it to boil over in well). I placed the casserole on the thermobaker, gas on for twenty minutes. It is now 2:20, and we don't plan on eating until 6:30 or so. I'll let you know how they come out. (I also plan to run them under the broiler for a few to brown them a bit when I take them out).
Monkey's Mom also makes this DAYS in advance when she has folks coming, combining everything BUT the milk, which she adds just before putting in the oven.
