Had some bananas going black, so made this today--adapted to Chambers cooking. Any changes I made are in green:
BANANA NUT BREAD
Ingredients:
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 cup butter or margarine
2 cups white sugar (1.5 cups white/.5 brown)
2 cups mashed overripe bananas (approx. four)
4 eggs, beaten
2 tsp vanilla
1/2 tsp cinnamon
1 cup chopped walnuts (I used 1/2 cup each English/black walnuts)
1. Preheat Chambers to 350 degrees. Grease and flour two 9x5 inch loaf pans.
2. Sift the flour, salt and baking soda into a large bowl. In a mixer bowl, cream together the butter or margarine and sugar until smooth; add vanilla & cinnamon. Add eggs one @ a time, mix well after each addition. Mix in the mashed bananas until well blended. Add dry ingredients by thirds, mixing each addition; incorporate nuts until well mixed. Divide the batter evenly between the two loaf pans.
3. Bake 30 minutes in the preheated Chambers. Open door, rotate pans, cook 5 minutes more. Turn off gas, check again 15 minutes later--done when a knife inserted into the crown of the loaf comes out clean. Mine were not QUITE done when I opened the door, so I turned the gas back on, and let them go 5 minutes more (may NOT have had to turn gas back on, but I did). Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for 2 hours or more before serving.

I read the comments @ the bottom and made adjustments accordingly. Also, I changed the mixing instructions, as several had said the way it was written, you wound up w/"dry ingredient spots" in the loaves. Also recommended baking for an hour, but a lot of comments were about how it burned tops in the oven that long...
