you need
2 1/3 cup milk,(1 can evaporated plus water to equal 2 1/3) 1/4 tsp nutmeg 2 bay leaves
6-8 Tablespoons butter 2 large onions, sliced diced garlic (opt) 1/2 cup flour 6 cup heated stock (chicken or veggie) 1 1/2 cups crumbled bluecheese
Heat milk, bay leaves and nutmeg to very hot in microwave and set aside.
In a large kettle cook onions and garlic in butter until just soft, about 10min. Stir in the flour well , it will be thick 2 min.
Remove the bay leaves from the milk and add it to the onions. Cook briefly to a smooth white sauce. Add the hot stock and heat well. Do not boil. Add the cheese and heat until the cheese is melted.

I also like to add some cooked wild rice. Makes it go further for a crowd. It keeps well and freezes just fine.
