Been perusing my King Arthur cookbook - so it says that I can make bread over a 12 - 24 hour period. 12 hours if using 1 tsp of yeast, making a sponge and leaving in warm, draft free place for the day. Hubby got it all setup this morning, so we'll see when we get home and I complete it.

I can't attest to the taste yet (haven't tasted it) but its definitely about 1/3 less in size. I'll let you know once I get a taste tonight

It was nowhere near as good as I'd hoped I think maybe my sponge needed some sugar to help it along *sigh* Next time I'll try the last rise in the fridge and see if that works better.
