Coat bottom of pan and cook one side only Stack Place a bit of filling toward one end onto the COOKED side Fold over once Fold over sides Final fold Cook up in some Paula Dean Serve The Recipe for the skins: 1.5 C flour ABOUT 2 C milk, batter should be thin and flow easily as a crepe batter does 2T Sugar 1T Salt Mix well and allow to rest a good 30 minutes Recipe for filling_Can vary wildly! Some Ricotta Cheese Some Cottage Cheese An egg yolk, some salt, some pepper and maybe some Parsley...I forgot the Parsley this time.

Oh Ha, they look sooooo good and I'm sooo hungry! I love blintzes but have always had sweet fillings.

you can do sweet fillings for dessert blintzes. you can put almost anyting in the skins. ant, aren't these like pannekoken? you can spread with jelly or pnut butter or butter...cream cheese and fold over into a half circle then again making a quarter circle....any way you do it, deelish.

Ha,
I've been DYING for some blintzes! I lived with a Jewish Family for a year and fasted and did all that sort of stuff and absolutely fell in love with blintzes!

I LOVE savory ones, with ground beef and mushrooms, yum!!!
