Can you find fresh cake yeast where you live?? I'm having a heck of a time finding it here locally. I'd like to try it, at least once.

You might try at any bakeries you have in town. They often use fresh & might either know of someone you can get it from or sell you some (they often buy this in huge quantities that a home baker would never want, so their suppliers probably wouldn't directly sell you a small quantity).
As you know berlyn I usually use fresh, but honestly, if there is a difference in the final product it is *very* subtle. I think much of my preference for it comes from the fun of handling the fresh stuff-the smell & consistency are quite unique. If I didn't have a good source for my little bulk pieces I certainly would happily use dried. I doubt I would spring for the little single blocks that I see from time to time in supermarkets. They are always outrageously expensive. Of course, I feel the same way about the envelopes of dried too! I always buy the bulk packages, especially since it lasts at least a year either in the fridge or the freezer.

Berlyn, try a health food store. I know the ones in my area carry fresh yeast
