Yes, "FULL FIRE" IS HIGH How much oil....maybe two teaspoons... Yes, preheated about five minutes I didn't do the dancing bubbles...i'm past that method...using timing now I used onions and mushrooms, gave the onions about a three or four minute head start i spread out the veggies and made sure the entire griddle was greased then poured out the egg and after the egg set, i folded the edges over to the center then EASILY lifted and turned the omelette over.
I turned the fire off when I poured on the egg.
I did this because I was lazy and hungry. There ws no time to go out for breakfast today and I wanted an omelette. i like those greasy spoon restaurants and thought about watching cooks making omelettes right on the griddle...that was the "AH_HA" moment and I went to work on the Chambers.

So glad you posted pics of your omelette and MsV asked the questions I had. Hubby is great at making omlettes, but banned from the griddle. Hmmm might have to change that since I won a griddle on Ebay for him. My favorite is mushrooms, onions and fresh spinach with cheese. Just heavenly ;D

Berlyn, my husband was a short order cook in his younger days. After he insulted my eggs (married two weeks) I threw the spatula at him and told him he was now breakfast cook. (Not sure whether that temper is the Irish or the German in me.)
His eyes got huge as saucers when he heard that he was supposed to cook pancakes and eggs on the shiny new griddle. I imagine I need a "starter" griddle to get him over the shyness.

Kellyjo40, you must be doing what I did which is to read up on tons of old recipe threads to try once you have your stove going. There is a wealth of tips and techniques to absorb, so let's both keep going.
As an aside, as a new wife I sweetly asked my husband if he wanted a second cup of coffee. He said, nah, your coffee's not really that good. I grabbed his breakfast and threw it in the sink. It seems every couple has a moment like this. We've worked out the kinks over the years!
PS I still don't know how to make good coffee. I'm a tea drinker. I solved my problem by making my husband into a tea drinker too. I make great tea!

I imagine I need a "starter" griddle to get him over the shyness. Dunno if you have Target up thar' in the northland, but here's how WE solved the problem: chamberscommune.proboards.com/thread/1570/griddleS-O-O-O-O-O-O-O much easier to keep the griddle CLEAN when you don't USE it!!! LOL. I DO leave the original one on though when using the broiler, as I think this one would burn up if you left it on the "B" burner that long ("B"s broilers burn WAY HOTTER than "C"s do, and don't have that heat baffle either). Also, get one of those griddle covers if you haven't bought one yet. That keeps the "splatters" from using the top burners from getting on the griddle. Sometimes you don't even SEE them, but when you fire up the broiler, they certainly show up on your griddle when they BURN on!!! CHEERS! Chuckie

Berlyn hasn't been out here since November of '12!!!! Makes me worry... CHEERS! Chuckie

I know, what you mean, Chuckie. Speaking of which, did you ever hear back from lwagne aka christi? Nana, I knew I like you as one fellow tea drinker to another.I've converted all my friends and they even have a tea break on their own. They now see how tea is refreshing all times of year even during our stinking hot, humid summers. I recently hosted a fellow Chamberite and when I offered him tea, he called it "warm" tea! That sounded so funny, but in his neck of the woods I think it's all sweet ICED tea (not that there's anything wrong with that!) Kellyjo40, I highly encourage you to get another griddle. I found quite by accident, the same Nordicware one Chuckie mentioned above at Walmart and I use it frequently. I had my original one as shiny as yours (see my rangers post "where are my sunglasses"), but it didn't stay that way for long. The C is easier to control the gridde, but why worry. The Nordicware holds up really well and isn't expensive (and is American made). I have one for my C which I store in a "hidden" cabinet right next to her. I do use the aluminum for the broiler, however. A CastIron Griswold #8 also works, but is heavy. I'd love a soapstone one, but $$$.

I know, what you mean, Chuckie. Speaking of which, did you ever hear back from lwagne aka christi? You know what, I did a bit more snooping on her, as ZERO reply to email. I think she went BACK over to "the dark side", and got RID of her Chambers!!! Perhaps she is just too embarrassed to come back and admit, I dunno.
IF memory serves me, I found a pic of her "new" kitchen via her posted website(s), and it had a new fangled stove...
You can go back find my old posts & look up her Branson website(s), but that's the way I remember it...
CHEERS! Chuckie
UPDATE: went back out & researched AGAIN, theirs is the "Roaring River Bakery" in Eureka Springs. Here is a pic of her from October of 2015:
WE don't DO "facebook", BUT if any of YOU do, go to her site & see if YOU can get her to respond!!!
