Maybe, just maybe, this pizza dough recipe is the best yet....just follow Lidia Matticchio's recipe. Pizza secret: when dressing the pie, keep the bulk of your ingredients to the edges of the pie. As the cooking proceeds, the toppings tend to slide to the center giving a nice even coverage.

Gosh, Rob you are on a roll and inspiring me to try new things.
Pizza, well you will have to tell me step by step how to do this. Hubby has been wanting to try a homemade pizza in Big Bertha for years now. Dough making just scares me. Pizza, pie & breads is an art form I have yet to attempt to try and master. Now that I see, I want to try. Is this a thick crust dough?? Why a rectangle pan and not a pizza stone?? Is it easier to build, move and serve in the square pan?? I bet it tasted damn good!

The dough is very easy and i'll post the recipe later this evening....it is NOT a thick dough but....next time i'll double up the recipe and use the same pan, bet it will be perfect for deep dish. This time we used the old pizza pan from the restaurant. About a year ago, I sort of suggested to our pizza delivery guy that I would like a pizza pan...I may have mentioned that if a pan found it's way to our house, that his efforts would be rewarded......anyway, he brought over three sizes for us! I used a pan for the pizza in the photo because the stone has been sitting onthe counter for a while and didn't want to put it in the oven and wait for it to heat through......it was just laziness on my part. The easier of the two cooking methods, pan and stone, is the stone.

Pizza Dough Recipe
3 cups flour 1 teaspoon active dry yeast 1.5 teaspoons salt 1 cup warm water
sprinkle yeast over the warm water and let dissolve mix the flour and salt together and toss into the water/yeast mixture. Use a wooden spoon or fingers [not wooden fingers, your real fingers] and mix till you have a stiff dough. turnout the dough and knead 5-10 minutes adding flour as necessary to prevent sticking until smooth and elastic. Place the dough into an oiled bowl and cover. Allow to rise until doubled in bulk, 1.5 hours or so. I let things rise in the oven with the door slightly ajar. I guess in Texas, you can pretty much find a warm spot outside the oven. Punch down the dough. Place on an oiled sheet or in a bowl, cover with plastic wrap and press the wrap to the dough. Place into fridge until doubles in bulk, 12-24 hours. That's it. Pat out and start cooking. I cook HOT....550 or so for about ten minutes.

Once my stove is back in commission I'll have to make it when I have people over so Peter and I don't eat the entire pizza.
Your food photos are works of art. I can just taste that pizza although I'm tasting mine with sliced black olives!

Pizza dough is really easy. I have a quick method one that was on the back of the pillsbury flour sack. I think it's pretty good and really fool proof. I'll find the recipe and post it for you. I assemble my pizza on the bakers peal and then put it on the stone thats been heating in the oven. Pizza really is easy - don't be scared.

I agree with you Berlyn about exploring Robert's home. I not only love the photos but love how the perfect dish,platter or bowl is always used. All unusual and very different.
