I'm thinking my valve/thermostat may have been replaced with a later Chambers version, as there is no set screw on the bottom. As for loosening/moving the valve, I tried to turn the shaft more towards the broiler when I had it torn down, to no avail.
The front panel is on correctly, as all the bolt holes line up, and there is no say like 1/4" gap on the bottom right side at the bottom, which would indicate it was NOT on properly. If you look at the second pic in the below link, you can clearly see the type knob it is, and also that it is off-center, as there is a gap on the left side:

And the third pic, you can see the gap clearly on the side near the broiler.
We looked at pics when we bought it, and the knob was set at like 275; Monkey remembers she couldn't turn it any lower then, and just thought it was a wee bit outta adjustment. I may try as Piper suggested in the first post to just pull it out a bit, and see if it will clear. I can also try as you suggested adjusting the bolts on each side of the thermostat for the front panel, but don't want to pull it in TOO MUCH and crack the porcelain as I did on the oven door!!!
I know the oven is off 50 degrees, as I put two thermometers in there, set it on 400, and it shut down to bypass @ 350. I was wondering, though, just how long it takes your ovens to go from stone-cold (or 140 pilot temp) to 400? Mine was @ 350 in 20 mins, but was still at 350 after 30; the full burner oven flame is a deep blue, and right @ 3/4"...
