That's one of my favorites and it really looks good! One of my other favorites for sauerkraut is Dijon Sauerkraut. I thought I'd posted it before but nothing came up in the search so in case anyone's interested, here's the recipe:
Dijon Sauerkraut
Ingredients: - 4 pieces bacon slices, cooked and cut crosswise into strips (don’t use if cooking hot dogs with sauerkraut) - 1/4 teaspoon salt - 1 small red onion, chopped - 1 Tart Apple, chopped (optional) - 3 cups sauerkraut, rinsed - 1 cup chicken broth - 1 teaspoon Dijon mustard - 1/8 ounce juniper berries, lightly crushed - 1 bay leaf - 1 teaspoon sugar or granular sugar substitute (sucralose)
Directions: 1. Cook onion in drippings 4-5 minutes, until softened. 2. Add bacon, sauerkraut, chicken broth, mustard, juniper berries, bay leaf, sugar substitute, and salt. 3. Bring to a simmer, cover, and cook on low 35 minutes. 4. Discard bay leaf. Increase heat to high and boil off most of the cooking liquid.

Our "Friend" left us another large sack of fresh cabbages!!! Wound up w/20#'s SHREDDED cabbage, which made a bit less than 4 gallons. Last gallon is gonna get the seed seasonings again. BTW, 5#'s shredded makes about a gallon of kraut, +/-
Needless to say, we're POOPED!! And poor Monkey did MOST of it--she didn't go in to work today, as she had to be a stroke judge @ a swim early meet this morning. And I didn't get OFF work until after TWO, so I just got in on the tail end of it!
Last 5# is 'wilting' in the salt in a crockery bowl, awaiting the seasonings and me to "fist it" down in the one gallon crock. Then it's off to KofC w/ME for a M-U-C-H needed brewski!!! Monkey will "wine" on the back porch--per choice...

When I saw your post I looked back in this thread and realized it’s been almost exactly a year since the last time you were gifted with abundant cabbages, and I saw the picture of my puny little cabbages. (They caught up and turned out fine in the end, by the way!) Well, what a difference better weather and sufficient rain make! Behold! My foot is there for scale again, but I had to balance and stick it out to get a fuller picture. Look at them! They’re already heading up!

I already TOLD dwayner I have not one but T-W-O three gallon crocks in my possession, do NOT need another one! I WOULD like the lid/weights for a 3 gallon one though, along w/a ONE gallon crock/lid & weights...
BTW, how's the stove video coming along?

I didn't get a chance to edit that and thought I just left the half done post to finish later. My wife came in as I was typing it and told me to get off my hind end and get the ice cream freezer going and for the Birthday festivities for our son and I know when it's arguing time and when it's jumping time. Obviously I jumped. Probably posted it instead of just leaving it like I'd planned to. Dwayner made a big pot of some awesome Gumbo that we had earlier. Worked two days on it. Then made a cream cheese cake for the birthday cake and my wife made a strawberry rhubarb dump cake, so we've just been playing around, eating, and all that kind of stuff.
I can run up and grab whatever you need if they have it on hand and if they don't can check the other place in Centralia. We'll be down there later this week.
I haven't been in very good shape the past couple of weeks. Docs are trying a different medication on me and it's less than stellar, so not doing the videos. Pretty darned frustrating.

NO, I got all I needed. Dwayner just decided since I got the weights/lid, I MUST need the 3 gallon CROCK too--even though he was HERE while the kraut was fermenting IN said 3-gallon crock, about 3 feet from the chair in the kitchen where he ate all his meals! I guess he might've been "over served" a few 'barley pops', and FORGOT that! LOL And I have yet ANOTHER 3 gallon Redwing crock that I currently use as a magazine rack. It, too, has been scrubbed and sterilized in the past & pressed into service when needed. We didn't have NEAR the problems we had w/the 'fungus' attempting to grow on top of the stuff like we did last year. I was pretty religious about checking it daily this year, and keeping things skimmed off as needed.
I hope they FINALLY get your meds figured out, and you can get on w/your life. They had a DIVIL of a time getting me regulated when in my early 30's I "hit the trifecta" and came down w/diabetes, arthritis and heart arrhythmia all @ the same time! I had so many spells on the clock while working @ the Post Office that they retired me on disability! Monkey & I had barely been married a YEAR when this occurred!! We went to netting TOGETHER what I had made ALONE. We had TWO house payments, credit card debt--you name it! We managed to get all paid off, but it was kinda scary for awhile. Touch wood, my drugs now have all been the same for about 20 years, and I haven't been having any problems--again, touch wood! Prayers you wind up the same!!!!

For those of us that grow cabbage, here’s a tip. I read somewhere that cabbage moths hate celery, (and that squash bugs hate nasturtiums) so I went in big for companion planting those. I can safely say that the verdict is in: it worked!! If you look closely at the picture above from this year’s cabbage patch, you can see the celery leaves peeking up here and there. I planted something called cutting celery. You get a lot of leaf, like parsley on steroids, but the stalks are inconsequential. I let mine hang around and flower and go to seed and then save the seeds for relishes, potato salad, pickles, etc. But I digress. The cabbages, and the broccoli that was planted nearby have been mercifully free of those little green worms that everyone hates! I only had a few. Normally I hose a head of broccoli off outside to dislodge them, and then soak them in salt water for about 15 minutes to remove the rest, and I’m always a little leery of how many come out in that soak…and I try not to think of how many don’t come out…But although I saw plenty of those white cabbage moths fluttering around, they seem to have disdained mine this year!! I’m thrilled. However, there is always balance: it’s been such a wet summer so far that slugs and snails abound. But at least they are easy to spot!
The nasturtium experiment is less definitive. I have picked some squash bugs off my zucchini and scraped off some eggs, but not many. But I don’t know if it’s the nasturtiums themselves or the little predatory flies attracted to the blossoms. I squished a squash bug(😜) that was kind of sluggishly sitting on a leaf and out of its body crawled a maggot-like creature. After my initial grossed out reaction, I went and looked it up and there is something called a feather-legged fly that lays its eggs in squash bugs and then the egg hatches and eats the bug from the inside out. Nature, red in tooth and claw indeed! But those little flies are my new best friends, and if it’s nasturtiums they want, nasturtiums they shall have!

Nana, Fighting bugs and critters wore me out. We were planting all kinds of stuff to protect our crops, running fishing line with strips of dryer sheets tied on it to keep the deer out of the garden and so on and one day when I was walking through our local farmers market looking at the prices and all that nice produce the light came on and down came the fencing and we now have some more lawn to mow. Nasturtiums were really good around here, plus they reduced whatever grubs the moles were after so were a double benefit. We have a pretty big deck and have planters on it with lettuce, tomatoes, beets, green beans and bell peppers for salads but for canning, we now are supporting the local growers.
Chuckie, when Dwayner brought that crock to the car he was a bit frustrated with the cashier. Apparently she was a new hire and was a bit confused. I told him I could use a 10 gallon crock since it was in between a couple of what I have so since you don't need it I'm planning to keep it. Unless you've changed your mind and want it!

Mach12, @ our LOCAL market, IF you tell them you're looking to CAN things, often times they will CALL you @ the end of the day, and say like "I have a BUSHEL of tomatoes I can't sell, TOO long in the tooth to make it to WEDNESDAY market, do you WANT them?" Now this is a small town market--where Monkey used to peddle HER wares--so that may make a difference. But it sure as hell don't hurt to ASK!!! And we also compensate them as well. And the tale of Dwayner & the crock, he relayed to me as well re: sales clerk. I've asked around here to see if anybody wanted it, to no avail. And--again--we already have TWO 3 gallon ones, so we're definitely NOT interested, so help yo'self! CHEERS! Chuckie
